You don't necessarily "fire" a coach. You just hire a different coach that pushes out the old coach. Go to "Players/Coaches" then "Coach Search". New window pops up for you to filter on what you are looking for. You can hire a Head Coach or a Coordinator off another team but the position coaches have to come from the Unemployed.
As a side note to this, the Head Coach is really the only one that matters. The head coaches philosophy (West Coast Offense/Balanced Def 3-4, etc) determines your playbook. None of the other coaches do anything.

Go to your team roster and click on a player name. A details box pops up and there should be a small check box at the bottom of the Ratings tab that says "On Trading Block". Click that.
